The Elstar has its origins in Holland and came about 1955 through cross breeding the Golden Delicious with the Ingrid Marie. It spread throughout the middle of the 1980’s, particularly in Holland, Belgium, the area surrounding Lake Constance and South Tyrol.
The Elstar is a medium sized, round apple of regular form. It has a bright-red marbled to washed-out opaque colour with a yellow base. The flesh is medium-hard and firm.
It is spicy and juicy fruit with a pleasantly refreshing acidic taste.

The Elstar is not only very suitable for fresh consumption, but it may also be used for fruit salads, desserts, strudels, cakes and compotes.
